Ok so i see that you explained above about alpha 1, 2 and 3 and their differences. With alpha 3 being the most recent. But when I go to download the game, via the link for those who purchased it..it says updated 9 days ago and says Alpha 1. Did you decide to call all the updates Alpha 1, but insert new version numbers when you posted them to itch? Lol I was looking around for Alpha 3 and got confused.
Yea, alpha number represents a stage of development: Alpha 1 -> Alpha 2 -> Alpha 3 -> Beta 1 . . . and so on. Some kind of milestones, game is currently at Alpha 1 stage. I think I'll add a roadmap later. At any given moment there is only one version of the game available for download, so you can't get older versions.
I would be glad to give your money back, but it seems itch.io doesn't have functionality for this. Or maybe i can't find it, if there is one I'll send back your money right away. Or maybe you can make your bank get it back. Thats regarding money.
Now about the game itself. Would be helpful to know what version of the game you have, you can check it in the bottom-right corner on main menu screen. You might have the version before the fix, when it indeed crashed every 2 minutes and at that time only demo was available. If it is the case would be nice if you can test the newer version.
One more question for better understanding, what Windows OS (7, 8, 10, 11) do you have?

So I've made some tests on Windows 11, you were right: game crashed every few minutes. But I guess I fixed it now or at least game won't crash as often. I uploaded new version, give it a try.
